with premium ingredients such as vegetables
from the Kaga and Noto districts in Ishikawa,
local seafood such as crab, and soy sauce and
rice made in Noto.
Be sure to notice the traditional elegance of the Japanese-style tableware,
such as the Wajima lacquerware from Wajima, Ishikawa Prefecture.
The restaurant only serves dinner courses that use local ingredients and local cuisine. There are no à la carte dishes.

Since ancient times, the kitchen knife ceremony has been held in Japan when preparing food offerings to nobility, gods,
and the Buddha. The restaurant owner is the successor to the Shijo-ryu school of knife-cutting arts. The knife cutter wears a ceremonial costume and cuts food ingredients without touching them directly.
